A recipe for something simple, nutritious and seriously delicious for one.
Genevieve’s Special
2 chicken thighs or one breast of chicken
½ tin of apricots
½ packet of French Onion soup powder.
Place chicken into an oven proof dish
Pour the apricots and juice over the chicken
Sprinkle on the soup granules.
Place in a hot oven 165% for 20 minutes or until cooked.
Serve with rice or vegetables
(If you are lucky enough to have a guest… double the ingredients)
